What I Ate Wednesday

What I ate Wednesday is probably going to be a lot more interesting now that I have Thursdays off :-) Tonight I made a recipe I saw in this months Real Simple



My sauce didn't turn out as creamy as theirs appeared to in the picture, but it was still really good, and also really easy! I only wish I would have added some garlic to the leek and shrimp mixture.

What I Ate Wednesday

Bit by bit throughout the day, I realized what dinner was.

It rained all day. Almost cold enough to be snow rain, that made me want to go home, get under a blanket, and not leave.

I had a busy weekend right up to Sunday night, so I didn't meal plan or grocery shop.

Then, during a reading group with third and fourth graders today, we read a Weekly Reader about Chinese culture, including a rather detailed section about food.

So, Chinese takeout, it was! Will isn't working tonight, so we had the luxury of eating our takeout in front of two episodes of Dexter while the rain outside continued to fall. Definitely a cozy night :-)

Tonight's dinner: shredded beef tacos.

I've made shredded chicken tacos a lot over the past few months, but when I was meal planning this week, I decided I wanted to do something a little different. So instead of chicken breast and salsa in the crockpot, this morning around six a.m. I put beef pot roast in and dumped a jar of salsa on top. I have to say that they were a little more work than chicken, only because the shredding when I got home late this afternoon was more involved. The chicken practically shreds itself.

However, they were worth the extra time because they were delicious! I even indulged in some Whole Foods guacamole, which, while expensive, was a perfect compliment to the tomato-ey beefy goodness underneath. One of my top considerations in making dinners is lunch leftover possibilities. This will make great re-heats tomorrow during a break from kids :-)

What I Ate Wednesday, take 1

I came across a blog one day with a weekly post they called "What I Ate Wednesday". I wish I could remember the blog so I could give them proper credit...Anyways, I loved the idea, and decided to take it up. Every Wednesday, I'm going to post what I had for dinner, whether it be a new crockpot recipe, a favorite soup, or even just ramen noodles or Chinese take out.

Tonight Will is at work, so I ate by myself in front of a few dvr'ed episodes of Parenthood. I love Will and love spending time together, but I honestly really enjoy the night or so a week where I end up having dinner alone. I value alone time, and not having to compromise on tv, haha. Dinner was delicious and will be easy to heat up for lunch leftovers tomorrow when I'm at my internship.

On the menu:

pasta with (jarred) tomato sauce, and (grass fed) ground beef, which I cooked with onions and garlic. Shredded Parmesan on top.

Salad greens with walnuts, dried cranberries, blue cheese, and my favorite balsamic vinaigrette.



On a side note, my dinner is pictured my new-ish butcher block cutting board from Ikea. I love the pretty wood grain in the kitchen, and would be lying if I said I didn't buy it partially because I thought it would make a nice background for taking pictures of food =)
